Ramadan Soup

To hasten the breaking of fast is the sunnah of the Messenger SAW. As such, we should follow what our Prophet SAW did. Sahl Ibn Sa'ad (r.a) said that the Messenger of Allah SAW said:

"The people will continue to be in good condition as long as they hasten to break the fast." [Bukhari and Muslim]

Lentil Soup is one of my favorite soup from the Middle East. In Ramadan, it is often the first dish that is taken to break the fast, as it is delicious and easy to digest. This soup can also be reheated anytime at all, but you may first need to thin it with heavy cream or water. Here's the recipe for a new favorite of your family...

INGREDIENTS:

2 cups Red Lentil
1 Onion (chopped)
4 tbsp Olive Oil
1 tsp Ground Cumin
1/2 tsp Ground Black Pepper
1 ounce Dry Onion Soup Mix
1 Lemon (juiced)
1/4 cup Fresh Parsley (chopped)

METHOD:

First of all, place the lentils into a pressure cooker and cover with about 1 inch of water. Add onion and oil. Cook for about 10 minutes. Turn off heat and let set for 10 minutes. Then, place lentil mixture, cumin and pepper into a food processor or blender, and 'puree' until smooth. Transfer the mixture into a large pot and return to heat.

When the soup is ready to boil, add onion soup mix. Stir until well mixed. Simmer until the soup becomes thick and creamy. Then, prior to serving, add lemon juice and chopped parsley for a little flavor and garnish.

Children and adults alike will enjoy eating lentil soup other than the month of Ramadan, especially on cold days. Try it out today!
