Iraqi Carrot Cake

This is one of Gloria Obayda's recipes. Gloria says, "I was encouraged by my family and friends to put down on paper my few recipes which were passed down from family and friends, or ones I made up myself.

I have tried to make some of the recipes easier and to encourage European people to try them. All or most of the ingredients can be found in a good supermarket. The odd ingredient may not be so accessible, but is available in Middle Eastern shops, which are located in many places.

I had a great deal of help from my family and friends, who have enjoyed my cooking and friends who have encouraged me with them."

INGREDIENTS:

  • 8 oz of self-raising flour
  • 2 teaspoons of baking powder
  • 5 oz of light brown sugar
  • 2 oz of chipped walnuts
  • 4 oz of grated carrots
  • 2 ripe mashed bananas
  • 2 eggs
  • ½ pint of corn oil

(serves 4 - 6 people)

DIRECTIONS:

  • Heat your oven to gas mark No. 4.
  • Mix all the ingredients well together.
  • Put into a well greased cake tin.
  • Bake for 1¼ hours.
